Baking pretty pink macaroons

As it is the new year, I thought I would take up something I don’t usually do much of: baking! I have enjoyed baking recently and one of the things I have never made before is macaroons. I love macaroons when bought from the shop but they are very expensive, and from making these little cuties I definitely know why! They are delicate and time consuming but so worth it in the end.

I adapted a recipie form Nigella Lawson’s no nuts macaroon’s recipie. I made macaroons without the almond flour and used plain flour instead. 

The ingredients you will need are:

125g plain flour

200g icing sugar

3 large egg whites

25g caster sugar

1tsp vanilla essence

A few drops of pink food colouring 

For the buttercream:

80g unsalted butter

200g icing sugar

A few drops of pink food colouring


Firstly you need to preheat the oven to 180*c (fan).

Now sift the flour and icing sugar together.

Whisk the egg whites until stiff (I used an electric whisk)

When stiff, slowly add the caster sugar and whisk even more until stiff peaks form.

Now add the vanilla and food colouring to the egg mixture.

Now, fold the egg mixture into the sifted flour and continue to fold until the mixture becomes paste like.

Prepare 2 baking trays with grease proof paper and prepare your piping bag with a nozzle of 1cm. (I used a sandwich bag with a cut off corner as a piping bag and added a nozzle in the cut out corner) 

Now put your paste into the piping bag and pipe small round circles onto your baking tray. 

Leave your macaroons to set and form a skin for 10 minutes.

Now put them in the oven for 10-12 minutes – they should be crisp looking around the base.

After they have cooked, take them out and leave to cool.

While your macaroons are cooling, make your butter cream icing.

To make the butter cream icing: sift your icing sugar and then add the butter and food colouring until creamy.

Once your macaroons are cool, pair them up according to similarity and size. Now add a dollop of buttercream onto one of the macaroon bases, and then place the other macaroon on top.

And there you are! Lovely, macaroons 🙂
